Tomorrow is national “pineapple upside down cake” day.sunday morning, as i planned out my blogging schedule, i knew cake making had to be on the weekly agenda.
as if i needed an excuse to bake a cake.
ha.
in fact, if there was ever a day to make a cake, it would be today.
i’ve had my nose to the computer screen for over a month.
like no lie. some mornings i’m up at 430 and then i’m sketching until 9pm.
pen on paper.
notes down on keyboard.
hours of tutorials.
brain melting information.
i
am
not
kidding
when
i
tell
you
i
have
been
studying
my
brains
out.
i never want to be complacent.
i never want to stop learning.
in my line of work, you have to stay fresh and trendy.
if you follow Art Moms on facebook, you have seen the creative burst that has been happening.
i’m exploding.
i’m bursting.
i’m on a creative acid trip.
this morning, i put some images on this teeny tiny flash drive, said a prayer, crossed my fingers, and set out on an adventure to find a printer.
my first 3 places were unsuccessful…
and at this point frustration started to set in.
i knew what i was looking for and these places didn’t offer what that was.
my four main stipulations were:
- a certain quality of paper to print on (i don’t want to sell something that will eventually fade)
- the colors had to be spot on
- i needed a quick turn around time
- i needed a decent price so i could keep my prices low for our awesome customers
i was beginning to wonder if that place existed. i started to feel upside down and considered heading home to just start on my pineapple cake.
but my mom didn’t raise a quitter. i have put so much into this, i wasn’t willing to just stop and give up.
and i’m so glad i didn’t
do you know how good it felt to see my vision starting to come to fruition?

Pineapple Upside Cake Recipe
- 3/4 fresh pineapple cut up into small pieces
- 1/3 cup unsweetened flaked coconut
- 1 box of yellow cake mix (i used the one pictured below)
- 3/4 cup vanilla greek yogurt (i used the one pictured below)
- 3/4 cup coconut milk (in a carton)
- 2 tsp cinnamon
spread the diced pineapple at the bottom of a 9×13 pan. sprinkle coconut over pineapple. mix together the cake mix, yogurt, milk and cinnamon and spread over top of cake. back at 350 for 28-35 min.
top with a dollop of greek yogurt and a few cherries.
*i used the gluten free cake because i liked the ingredients in it better. i always try to keep as healthy as i can. especially when making dessert. i’m sure you can use a regular cake mix and just put over diced pineapple and it would be perfect.
