Strawberry Fields and Rhubarb Bread

i went into this summer saying “this is going to be the summer for adventure!!!!” i’ve always found myself saying “NO” more times than i say “YES” ….i’ve always had the tendency to put painting first and play time last….so this summer….i’m reversing my thinking..for years, the guilt would consume me if i was doing something other than painting and it honestly feels  so good to let that go. not that i don’t still have guilt but i’m learning to enjoy the seconds i put into every new adventure…whether it be something small like reading a book or something big like Strawberry Picking….yes…i said it…this city girl went out into the farm fields and picked strawberries….something i would have said no to in the past! and you know what…..i had a blast! it feels so good to open myself up to new things! yay! try it…take a few days and say “YES” to everything…especially the things you would normally turn down…i have made more commitments in the past month than i have my entire life….and wow…..has my heart been filled up with tons of new memories 

* a quick disclaimer to my friends reading this……do not ask me to go camping yet, i’m afraid my answer will still be “NO” 

along with strawberries, i grabbed some rhubarb…ONE OF MY FAVORITES….i had a rhubarb plant for the last 3 years and this year, it died….how do you kill a rhubarb plant you ask? bring it to my house…i’ll do it for you…..so i started the spring mourning my rhubarb and was filled with glee when i found out i could pick some yesterday at Sanderson Farms (east of Brookings) ~this morning i woke up and made a loaf of rhubarb bread and i don’t know which melted faster…the butter on top or my heart…..

Ingredients

  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/3 cup sugar
  • 2/3 cup brown sugar
  • 2 cups rhubarb
  • 4 T applesauce
  • 1/2 cup vanilla yogurt
  • 1/2 cup milk (i used almond milk) 
mix all together and bake for about 1 hour – 1 hour and 10 minutes at 350

p.s. ~ i said “YES” to a second slice
