I love mornings….i love the peace, the quite calm, the sun’s warmth
but most of all, i love watching the cream swirl in my morning coffee
dear mom, no one drinks 6 cups of coffee starting at 6 am like you do
*except for me
and coffee is wonderful paired with these recipes
Pear Tartlet
Ingredients
- 1/2 cup yogurt
- 1/2 cup sugar
- 3 egg whites
- 1 tsp baking powder
- dash of salt
- 1 tsp vanilla
- 1 cup flour
- 2 pears sliced and cored
- squirt of lemon
- cinnamon and sugar to sprinkle on top
Directions
whisk yogurt, sugar and egg whites together~in separate bowl, combine flour, baking powder and salt….mix in dry with the liquid…stir in vanilla…pour into a round 9 inch cake pan….layer pears over tip and sprinkle with lemon and cinnamon and sugar….cook at 375 for 45 min….top with whipped cream
Banana Split Baked Oatmeal
- 2 cups old fashioned rolled oats
- 1/3 cup light brown sugar
- 1 teaspoon baking powder
- 1 tablespoon grated orange zest
- 1/2 teaspoon salt
- 1/2 cup walnut pieces, chopped
- 1 cup sliced strawberries
- 1/3 cup dark chocolate chips chocolate chips
- 1/2 cup oatmeal
- 2 cups milk
- 1 large egg white
- 3 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 1 ripe banana, peeled, 1/2-inch slices
Directions
In a large bowl, mix together the oats, sugar, baking powder, orange zest, salt, half the walnuts, half the strawberries, half the chocolate and half the coconut. (Save the other half of strawberries, walnuts, chocolate and coconut for the top of the oatmeal). In another large bowl, whisk together the milk, egg, butter and vanilla extract. Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts, chocolate and coconut on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shimmy/shake the baking dish to help the milk mixture go throughout the oats. cook 375 for 45 min
Pancake Muffins
Use your favorite pancake batter….mine is here…..and pour into sprayed muffin tins….add in your favorite fruits or fill ins…we used fresh blueberries, raspberries and bananas….cook at 350 for 20-25 minutes….top with real maple syrup and enjoy

Go ahead….make something wonderful for breakfast…..start your day out by being productive….i cook breakfast to camouflage my life….makes me feel accomplished….makes me feel awesome…..
i mean, when i cook these things and blog about them, people think i have my life completely in order….so much in fact, i run into people at the store and they say to me
“HOW DO YOU DO IT?”
boy do i have them fooled…..i live a life of looney….masked by some really good recipes (AND 6 CUPS OF COFFEE~)
