Beef Bourguignon (Beef Stew Marnie!)

Beef Bourguignon (Beef Stew Marnie!) 

i have to include the translation for bourguignon for one of my bestie’s Marnie…because she said “what’s that?” when i tried to pronounce what i was making for dinner….i love her…she always asks “what’s that?” in the most perfect moments of conversations and saves me from looking clueless…..even though when we are around all of our friends…they pretty much know they need to explain 75% of things to us!

i love flitting through life clueless-ly with her!

  • 2-3 pound Chuck Roast
  • 3 tablespoon of olive oil
  • 2 teaspoons of sea salt
  • 2 teaspoons of pepper
  • 4 cups of chicken stock
  • 2 cups of red wine
  • 5 cloves of garlic
  • 1 tablespoon of rosemary (dried or fresh)
  • 1 bunch of fresh thyme
  • 4 bay leaves
  • 1 bag of baby carrots
  • 4 potatoes peeled and sliced
  • 1 cup of mushrooms

Coat the Chuck Roast with olive oil, salt & pepper and sear the roast for 2-3 minutes on each side. Add stock, wine, garlic and herbs to crockpot and place chuck roast on top…add in veggies and cook on low for at least 8 hours (i say at least because this guy actually took me 2 days to make….one day at 225 in the oven for 6 1/2 hours and then a full day in the crockpot…not sure if my oven is out or what….but let me tell you…it was completely worth it) About 30 before serving remove meat from the crock pot and place onto a plate…pour the liquid and veggies into a stock pot, bring to a boil and thicken with


  • 1/4 cup cornstarch in a cup…and then add
  • 5 T cold water or enough to make the corn starch liquidy
pour the cornstarch/water in slowly…you may need more…you may need less…depends on your preference for consistancy…return to the crockpot…cut up meat (which ours was so tender….it fell apart) and place into the stew….keep warm until ready to serve…..A hard baguette is a MUST for this meal….dip it into the stew, stir it into the stew, crumble it into the stew, put it at the bottom and pour stew over it…i don’t care what you do with your bread and stew….but i hope you enjoy it! 

For Pre-Dessert we had homemade applesauce…(yes…AGAIN…for the 2nd night in a row)

It’s super easy i just diced and peeled 13 apples (yes..13…you need to understand….Jerime, Gracie and I fight over food….so in Jerime’s words…”I COOK FOR A WHOLE FOOTBALL TEAM”) ~after the apples are peeled and diced, i threw into my steamer for 40 minutes….this is easily one of my favorite kitchen appliances…i use it ALL THE TIME

after they are done steaming….i put in a bowl and add 1/8 cup sugar, 1/4 cup brown sugar, some cinnamon (i don’t measure) and about 1 tsp vanilla and then mix with my hand mixer until smooth….sometimes i even drizzle caramel and whipped cream on top….but not this time because if you remember…this was labeled as our “PRE-DESSERT”

Because my fabulous hubby brought me home CherryBerrys….I’ve said it before and I’ll say it again…..the day he stops bringing me home food is the day i change the locks on our door!

Even the puppies got some Beef Bourguignon in their doggy bowls…and after eating it, they did exactly what we did on the couch while we watched the Sing Off
