wowie….these do not need a story…they don’t need any hype….they are plain and simple~AMAZING…without being plain and simple!
First I started with my Pancake recipe:
- 1 cup of buttermilk (I never have this on hand so I just add a few squirts of lemon juice into my milk) this time i used 1 cup of Almond Milk and i may be switching from now on
- 1 egg
add to it:
- 1 cup flour
- 2 T of sugar…(i just grab with my hand so you may want to add more or less)
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1tsp vanilla
- 1/4 cup canola oil
mix all together and set aside…..
Cinnamon Filling
the recipe i found on Pinterst~ which led me to Recipe Girl…..her recipe called for 1/2 cup butter….i wanted to make it lighter so i replaced butter with vanilla yogurt (which if you’ve been following us…you’ll notice this is a trend of mine!)
- 1/2 cup vanilla yogurt
- 3/4 cup brown sugar
- 1 T ground cinnamon
I beat this all together and then put into one of my cake decorator containers…you can totally fill a ziplock baggie and cut off the bottom corner of the bag

for the icing that goes on top….i didn’t skimp on calories because i knew we wouldn’t be using too much of it….unless one were to eat it in spoonfuls straight from the bowl…and that would NEVER happen here…(despite what Gracie says)
- 2 oz light cream cheese
- 4 T Butter
- 3/4 cup powdered sugar
- 1/2 tsp vanilla
beat together in a bowl
now comes the cooking part…..in a skillet, add some canola oil and set the heat on medium low….pour in your batter and then swirl the cinnamon filling in a circle on the pancake….cook, flip, spread on some icing…..and giggle at the goodness!
