i used my basic pudding cake recipe from HERE….i used 2 cake mixes and made four layers….2 chocolate, 1 vanilla and 1 strawberry…
for the vanilla and strawberry…start with this basic cake recipe….split the recipe between 2 9inch round cake pans….bake at 350 for 25 minutes or until toothpick comes out clean
1 pkg vanilla cake mix
1 pkg Jello fat free sugar free instant vanilla pudding
1 cup vanilla yogurt
3 egg whites
1 tsp vanilla
1 cup 7 UP
we’ll turn the vanilla cake into a strawberry cake later after it cools by using 1 cup of warm water and 1 small box of sugar free strawberry jello…mixed until dissolved….poke holes into the top of the vanilla cake and spoon jello liquid into the small holes…filling it with the liquid (i only used about half)…i used the strawberry layer as the first layer
don’t worry about it looking horrible….you will cover it with the first layer of cream cheese frosting…
for the 2 chocolate cake layers, use the same recipe as above…but incorporate chocolate pudding and chocolate cake instead of vanilla…separate between 2 9 inch round cake pans and cook at 350 for 25 minutes or until toothpick comes out clean

1 cup vanilla yogurt
3 egg whites
1 tsp vanilla
1 cup 7 UP
For the cream cheese frosting:
Ingredients:
1 lb (2-8 oz bricks) light cream cheese
4 Tbs unsalted butter, at room temperature
3 tsp vanilla extract
4 cups powdered sugar
In a large bowl, cream together butter and cream cheese with an electric mixer. Mix in vanilla. Add powdered sugar, one cup at a time, until smooth and creamy. I saved a little bit of plain white frosting for the flowers on top and then added red food coloring to the rest to make pink frosting….layer each round cake with a little frosting in between and then spread remaining frosting on the cake
add decorations with reserved white frosting and top with dark chocolate covered strawberries….recipe found HERE
This is mom’s birthday cake….first we’ll be having Thai Peanut Noodle Bowl…recipe HERE and I’m sure a little wine!

My granddaughter age 14 recently made this cake and it was delicious!! She made it gluten free with boxed gluten free cake mixes but it still tasted awesome, both her and her little brother are gluten intolerant. Wonderful recipe and I already told her Grandma will take one for her birthday next year! LOL.:)
