Girl’s Day and Homemade Poptarts…such a delightful day!

Getting ready for an art show is tough….but leaving for an art show is tougher….i’m not gonna lie….i can hardly wait to lug my suitcase out the door and step into the great life of freedom! however, by day number 2 away from Gracie…i feel a part of me is missing and i start longing to be with her again…So, since she was about 3…she knows, when we get home from an art show…that means AUTOMATIC GIRL’S DAY! ~and that’s exactly what we had yesterday! Our first stop was the Juice Stop and then we headed to McKennan park for their weekly summer play (LOVE these…we’ve been going since Gracie was 2…and if you get the chance….GO…Tues-Thurs at 10 am) SO MUCH FUN!

then we headed to the senior citizen center to visit my grandma…this is the same feisty lady i blogged about here in My Grandma does Cartwheels for this Recipe! She was so proud…she actually left her poker table to show us around…and i think she introduced us to hundreds of people…always with the opening line “4 Generations Here” ~the only bad thing about the stop…her “boyfriend” wasn’t there that day! I wanted to personally shake the hand of the man that can actually “love” my Grandma…don’t take that the wrong way….she’s just extremely (and i mean extremely!) independent, sassy and full of feisty-ness~ but full of STRENGTH, WISDOM AND BEAUTY

after visiting Gram, we headed to a lunch date at Minerva’s and stopped at the Home Porch for her famous treats! Another place you HAVE to go to if you get the chance!

Then we came home and made Homemade Poptarts…and let me tell ya…..these were AWESOME!

I was going to make homemade pie crust…but it was just so easy to go out and buy some Pilsbury Pie Crusts at Hyvee…but if you’re feeling ambitious…please, feel free to make your own!

What you’ll need for the recipe:

  • 1 pilsbury pie crusts (makes 3 poptarts and 3 mini round poptarts)
  • 1 egg, lightly beaten for wash
  • filling (this is the fun part…be creative *SEE BELOW FOR IDEAS)
  • powdered sugar and 1/2 and 1/2 for frosting
  • food coloring and sprinkles for decorating

spread your pie crust out on wax paper and trim edges to make a big rectangle…save remaining pie crust to make minis…cut crust in half right down the middle and then cut into 3rd…this will leave you with 6 squares/rectangles (they don’t have to be even…mine weren’t) spread each square with some egg wash and then fill with your choice of filling. place square on top of other square and press edges together with a fork and poke some holes in the top…bake at 425 for about 8-10 until crust browns….cool and spread with frosting and sprinkles….so good…and a huge hit with gracie!

Topping ideas

  • nutella
  • brown sugar with cinnamon and a tiny teeny pat of butter
  • strawberry rhubarb sauce (i’ll post this recipe soon!)
  • any preserves or jam
  • crushed graham cracker, marshmellows, chocolate chips
  • cinnamon apples (recipe here)
  • blueberry sauce (recipe here)
  • strawberry sauce (recipe here)

just some ideas…we made Nutella, Brown Sugar and Strawberry Rhubarb….all AMAZING!
