I couldn’t have asked for a Better Mother’s Day~ Boston Cream Pie, Greek Salad, and Steaks with Whiskey Mushroom Gravy

I think the Angels knew all of us Mothers needed a perfect day with a mix of sunshine, love, food and family….I know I got mine! I woke up at 625 with excitement to make my first Boston Cream Pie (per mom’s request) Now, you may think…what were you doing cooking on Mother’s Day? It was plain and simple, my choice! Even before I started this blog, i loved cooking…and what a better way to show my mom how much i appreciate her by making one of her favorite desserts…it was a hit…..so delightful….

i used my cake recipe from the Playdates, Princess Drinks and Pistachio Cake post. I thought about trying a new cake batter….but seriously…nothing compares to this cake….i just replaced the pistachio cake and pudding with vanilla and separated the batter into to 9 inch round cake pans, cooked for 25 minutes each and let cool completely

for the middle custard filling i used

2/3 cup sugar
1/3 cup cornstarch
2 1/2 cups milk
2 large eggs (slightly beaten)
1 large egg yolk (slightly beaten)
2 tsp. vanilla

Directions:

Combine sugar and cornstarch in saucepan. gradually add milk, stirring with wire whisk, bring to a boil over medium heat…cook 1 min..stirring constantly…Combine eggs and egg yolk in medium bowl. gradually add hot milk mixture to eggs and egg yolk, stirring constantly with wire whisk….return milk mix to pan and cook over medium heat until thick (about 2-4 min) stirring constantly…remove from heat and stir in vanilla and place in the fridge to cool for at least 1 hour

When the custard and cake are completely cool, take the first layer of cake and spread with custard and place top cake over the custard to form 2 layers

then you make the chocolate glaze for over top

  • 1 cup milk chocolate chips
  • 2/3 cup heavy whipping cream
  • 1 T corn syrup

melt all in saucepan and then cool….pour over cake……and then place in refridegerator until ready to serve…..

as soon as that was done, i sliced up a pound of potatoes and placed in a foil pan to make these  grilled potatoes , which i placed on the grill for one hour on medium and then placed in the oven at 200 degrees while the steak cooked to keep them warm

i whipped up my Strawberry/Mandarin Orange Spinach Salad with pecans and blueberry yogurt poppy seed dressing and my dad was quoted by saying “this is the best salad i’ve ever had”

mom brought over this Greek salad with cucumbers,kalamati olives and feta cheese

  • 2 cucumbers diced
  • 1/2 cup feta
  • 3o olives
  • 1 tsp garlic powder
  • 3 T balsamic vinegar
  • 1 1/2 tsp olive oil

marinate at room temperature  for 45 min

and for the main course we had Steak with Whiskey Mushroom Gravy

  • 2 T olive oil
  • 2 cups sliced mushrooms
  • 3 oz of whiskey (i used Crown and got scolded for using such good whiskey…but that’s all i had)
  • 1 cup whipping cream
  • Paul Prodhummes Meat Magic Spice (season to taste)
  • 2 tsp cumin
  • 1 tsp pepper
  • grilled steaks

Directions

  • sautee mushrooms in olive oil (i start adding spices now and continue adding during process), add whiskey and reduce liquid 60-80%….add whipping cream, bring to boil and add 2 T cornstarch with cold water to thicken…season to taste and serve over steaks like a gravy

It was a perfect meal for a perfect day! We spent the day playing cards, Trivia Pursuit and Bean Bags and then we ended with a nice walk…absolutely awesome! I even scored these three things for mom’s day presents….yay!
