What a gorgeous day…FINALLY….seriously spring…it’s about time! I woke up to sunshine this morning and couldn’t help but know it was going to be a glorious day! First of all…I love Mondays…they are my yoga/lunch date days … As I’ve said before, I’ve been doing yoga since i was 19…it is something that i whole-heartedly love…i love it for the exercise but i’ve really learned to love it for the inner peace. I found the Dharma Room two years ago and I’ve been hooked ever since….it is my place of peace…my sanctuary….my all loving comfort zone…my heart’s home. It reminds me of the bar in Cheers….you walk in and people shout “NORM” ~well…not really….it’s more like “CHANTEL!!!” It’s a place that you can go to that can wash away all the gray spots in your day and turn them into spots of BRIGHT FUSCHIA AND PURPLE. When i’m not practicing at the dharma room, i’m doing hot yoga at Santosha….and i’ve fallen madly in love with that also! I love my yogi friends….i’ve known them all for less than two years but for me…it feels like a lifetime. I can’t even explain to you the beauty that place radiates…it is unlike anything else i’ve ever known. Another thing that made me fall in love with my yogis….they feed me lunch afterwards….the quickest way to my heart is truly through my tummy! REALLY IT IS….I AM A FOOD SLUT! It doesn’t matter that i’ve got a million things to do…i fit this magical 3 hours into my schedule every week! ~with absolutely NO REGRETS~ Thank you all for making me feel beautiful and letting your light shine into mine….words can not even begin to express how grateful i am to have each and everyone of you in my lives! For dinner tonight we had Thai Peanut Noodle Bowls…and it was the best way to end this perfect day! and it was super duper easy….
Thai Peanut Noodles
- 1/2 c. chicken broth
- 3 Tbsp. creamy peanut butter
- 1-2 tsp. garlic chili sauce
- 1 1/2 Tbsp. honey
- 3 Tbsp. soy sauce
- 1 1/2 Tbsp. fresh minced ginger
- 2-3 cloves garlic, pressed or minced
- rice noodles
- Chopped green onions
- Chopped cilantro (i truly think this is what made it so tasty…love cilantro)
- Chopped peanuts
- grilled chicken breasts
Directions
Chop up your cilantro, green onions and crush up your peanuts (Gracie was my peanut cruncher….just her, a ziplock baggie full of peanuts, and my hammer~ she was as happy as a clam to pound away) Once you have these three cut up…place in small bowls and set to the side…these are your toppers! Cook noodles in salted water…this is the first time i’ve made rice noodles…you actually bring the water to boiling, put the noodles in…AND THEN REMOVE IT FROM THE HEAT..and let sit for 10 minutes…then rinse (yep….rinse with cold water) In the meantime, combine chicken broth, peanut butter, chili sauce, honey, soy sauce, ginger, and garlic in a small saucepan over medium-low heat. Whisk until smooth and remove from heat. Toss cooked noodles with sauce and add chicken breasts….serve in bowls and add your toppings….this one was a definite keeper!
After one of the toughest yoga classes i’ve ever had and this amazing food filled day…i’m going to go wrap myself into a little bunny slippered ball and smile into my memories
