If you read 34 things I’d like to do this year….you probably remember reading that i want to make a layer cake…well, not only did i make a lemon layer cake with lemon cream cheese frosting…i made a RAINBOW LEMON LAYER CAKE WITH CREAM CHEESE FROSTING….
i used my famous pudding cake recipe and tripled it….you can find the recipe here at Playdates, Princess Drinks and Pistachio Cake , but instead of pistachio cake, i used white cake/pudding/yogurt for 4 layers and a lemon cake/lemon pudding/lemon yogurt for 2 layers
~the reason i didn’t use lemon throughout is because i used food coloring for each layer (6 total) and the lemon has a yellowish tint so i knew i would only be able to use lemon on the yellow and green layer
so for the red, orange, blue and purple layers i used white cake…and i got 2 layers for each batch….
after baking each layer at 350 for 25 minutes…i let cool completely and layed out on wax paper
then i made the Lemon Cream Cheese Frosting
- 1 carton cream cheese (softened)
- 1/2 cup butter (softened)
- 2 tsp lemon zest
- 2 T lemon juice
- 1 tsp vanilla
- 3 cups powdered sugar
blend all together with a mixer until smooth and then put a light layer of frosting on each layer of cake….almost like the glue that holds the layers together
then frost all over and sprinkle with sprinkles…..ahhhhh…so cute!
yay……so proud…..i can’t wait to eat it and open it and look at all the colors…but i shall have to wait until tomorrow…….
but do you think anyone would notice if i did this?
and since we are transporting this piece of excellency to pierre…i made a special trip to Bed Bath and Beyond to get an on-the-go cake carrier….but one problem…..
do you notice the difference in size? cake topper won’t fit…..so totally like me to over-do…..DO IT BIG…OR STAY IN BED…..
now, how can i get it there safe….any ideas?
~here is a picture of it the next day…safe and sound in our tummies…it was delightful..i highly recommend making it…the 3 little girls loved it as much as all the big kids…it was just so happy you couldn’t help but smile….and so delicous!
