Oh my, was this a fun but extremely messy Mommy and Me recipe…..this is not for people that don’t like messes…and especially not for people who are germ-a-phobes…there was a lot of finger licking going on….and i mean A LOT….i sectioned off a row for Gracie and put her in charge of them…because i think her fingers were in her mouth as much as they were in the liners…ha…but ohhhhhhh it was so fun to do together~
I used the recipe posted on Playdate, Princess Drinks and Pistachio Pudding Cake but substituted yellow cake and vanilla pudding….you can also just use a plain box cake…but we love this recipe…it’s so big and fluffy (much like one of my body parts)
Ingredients:
1 pkg yellow cake mix
1 pkg Jello fat free sugar free instant vanilla pudding
1 cup vanilla yogurt
3 egg whites
1 tsp vanilla
1 cup 7 UP
Directions for Cupcakes
Line a cupcake tin with liners and spray with Pam…Combine first 5 ingredients, beat on low for 1 min…gradually beat in soda…pour equally into separate smaller bowls…we did 5 colors….then add food coloring to each bowl and stir….with a spoon, add first color into bottom of cupcake liner….HUGE TIP HERE…..DIP YOUR FINGER IN A LITTLE CUP OF WATER AND SPREAD BATTER….DO IT FOR EACH LAYER…MAKES IT MUCH EASIER TO SPREAD….layer each color in your order of preference….Bake at 350 for about 18-22 minutes. Cool completely before frosting
~Frosting~ (you can use whipped cream for frosting or premade frosting…we choose to make our pudding frosting)
1 1/2 cup milk
1 box sf ff instant vanilla pudding
1/2 tub cool whip
mix for 2 min and top cooled cupcakes…don’t forget the sprinkles
