Coconut Curry Chicken and Strawberry Pie

I think we should start with the strawberry pie recipe first….because dessert is most important…plus it needs to set for 3 hours…this is another weight watchers recipe…it is so refreshing…and super super easy to make

Ingredients:

3 oz box of fat free sugar free strawberry jello
1 pint of strawberries sliced
2T cornstarch
1 cup hot water
1 cup cold water
1/3 cup sugar
graham cracker crust

Directions:

Slice strawberries and spread into the graham crust….in saucepan mix jello with cornstarch…add 1 cup hot water and 1 cup cold water…mix and add sugar…cook until boiling and then pour over strawberries…place in fridge for 3 hours so gelatin can set…serve with whip cream….EASY AS PIE…(literally)

Now onto the main course….Coconut Curry Chicken….I got the recipe from Tasty Kitchen….it’s actually a crock pot recipe but i always forget to throw it into the crock pot (nice huh?) So, i made it on the stove in a skillet…and it was FABULOUS!

Ingredients:

1 PKG Boneless Skinless Chicken Breast, Cut Into Large Cubes (i used 4 boobs)
1 whole Onion, Peeled And quartered
2 T Gourmet Garden Garlic
1 T ginger (i use Gilroy Farms minced Ginger
1 whole Small Green Bell Pepper, Seeded And Quartered
1 can tomato paste
1 can Lite Coconut Milk
1-½ teaspoon Salt
1 Heaping Tablespoon of Thai Kitchen Red Curry Paste (you can also use 1 T curry powder
1 Tablespoon Garam Masala (Indian Spice Mix) (found it at Hyvee)

2 Tablespoons Water
1-½ Tablespoon Cornstarch
to thicken at the end

Directions:

Cut up chicken breasts and season with salt and pepper….saute in skillet with a little olive oil until cooked through…while chicken is cooking, place onion, garlic and green pepper into a food processor (i gotta get one) or blender (that’s what i used) Blend it together until veggies are smooth….add tomato paste, ginger, coco milk and rest of spices…blend again until mixed together….now pour over cooked chicken breasts in a skillet and let simmer for 30 min….when ready to serve thicken with cornstarch and water (remember…bring back to a boil before you add cornstarch and water for it to thicken properly)

Serve over Basmati Rice…….and listen to the ohhhhh’s and ahhhhhh’s
