Today I found myself sitting on the computer at 3 o’clock….starving and famished beyond belief!!! Why I don’t take the time to eat until then is beyond me..don’t ask…I have no answer! I stumbled upon a blog called Iowa Girl Eats …as the hunger pains set in, i began to salivatate as i clicked through her pages of recipes! Go there….I promise…it’s awesome! In fact, so awesome that I planned every nights meal this week from the first 5 pages of her blog! We shall eat like Kings! Tonight I made Irish Shepard’s Pie and so far Iowa Girl Eats is 1 for 1! Hooray!
Irish Shepards Pie
Ground Beef
onions
zucchini
Gourmet Garden’s Garlic
3 T Flour
1 T ketscup (she called for tomato paste, i didn’t have any)
1 T worcestershire sauce
1 T soy sauce
14 oz beef broth (she called for chicken, i had a container of beef in fridge)
1 bag frozen mixed veggies
salt and pepper
mashed potatoes for top
Directions:
cook hamburger, onion, zucchini, garlic and salt and pepper. when fully cook add 3 T flour. cook for about another 3-5 min. then add rest of ingredients. simmer until thickened. pour into a casserole dish and top with potatoes….in which i added parmesan on top (because cheese is my lover)
cook at 400 degrees for 30 min
if you don’t have these yet…BUY THEM….(yep, i just screamed that at you!) they are WONDERFUL (screaming again) I use them in everything….i buy them at Hy-vee…they are called Gourmet Garden Spices and Herbs…swear by ‘em
looks a little ooeey gooey…but it’s oh so good….promise
yes, i used instant mashed potatoes…that’s all i had…..i can hear my mom SCREAMING at me as i sit here typing….oh the shame!
and this is what the casserole dish looked like after we ate! I’d say it was a hit!
