Homeade Crepes with Apple Filling

I love crepes….I love apples….a match made in Heaven!

Cooked Cinnamon Apples: (we make these a lot and just eat them by themselves)

  • 6 apples peeled and diced
  • 1/3 cup sugar
  • cinnamon
  • 1/3 cup water

add all into a pot and cook over medium heat until apples are tender, when tender enough, add cornstarch and coldwater mixed to thicken (see, i told you i use this trick for LOTS of stuff…soups, sauces, gravies, syrups)

When done, pour into a serving bowl and set aside:

Crepes:

  • 1 cup flour
  • 2 eggs
  • 1 T oil
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1 1/2 cup milk

Stir all together and add to skillet on medium heat (1/3 cup at a time) Remove skillet and spread around to thin out. Cook 30-45 seconds and then flip and cook another 30 seconds on the other side

Fill crepe with apples…..mmmmmmmm yummy perfection!

and another thing that rocks my socks off……THIS!

don’t think i’m martha stewart year round…when painting season begins, my family is lucky if they get a bowl of cereal for breakfast and jimmy johns and pizza becomes a “go to” for dinner! see…i spoil them now and then when they complain…i can say…remember when i made you guys crepes? i’m one smart cookie…mmmmm did someone say cookies?
