Doughnut Muffins~ Cinnamon and Sugar and Chocolate Glazed
I got this recipe from Smashed Peas and Carrots…she has some amazing recipes. I changed it a little bit by subbing yogurt or mayo for the butter. I do this in all my baking recipes…a little secret from mom that passed down to me…that i’m passing to you!
Doughnut Muffins (makes 6 muffins…i will be doubling next time)
1/2 cup sugar
1/4 cup vanilla yogurt or light mayo
1/4 tsp ground cinnamon
1/2 cup milk (soy milk works nicely too!)
1 tsp baking powder
1 cup all-purpose flour
1/4 cup butter, melted
1/2 cup sugar
1 tsp cinnamon
Preheat your oven to 375 degrees and grease muffin tin, set aside. Mix up the 1/2 cup sugar, 1/4 cup yogurt and cinnamon in a large bowl. Then, add in the milk, baking powder and flour until just combined. Fill muffin tins about 3/4 full and bake for 15-20 minutes.
During baking get your cinnamon-sugar topping mixed up! Melt 1/4 cup butter in a small bowl and then in a separate bowl mix together the cinnamon and sugar. When the muffins are done, remove them from the pan. Dip the tops in the melter butter (I used very little butter…because I’m kind of a butter-phob) and then roll the WHOLE muffin in the cinnamon-sugar (i used lots of sugar…because i’m kind of a sugar-addict) mixture. Let cool…or at least try to let cool..then enjoy!
CHOCOLATE DOUGHNUT MUFFINS
I swore, the next time i made these, i’d do it with chocolate glaze…i can’t tell you the last time i ate a doughnut…and these doughnut muffins were screaming at me to made again with chocolate…so magic was made this morning in my kitchen and gracie beautified the magic with sprinkles….because sprinkles make everything better! don’t ya think?
Make the muffins up top without the cinnamon and sugar and butter topping….in a small saucepan add:
3/4 cup chocolate chips (i use special dark chocolate)
3 tablespoons butter
1 tablespoon corn syrup
heat on very low heat until melted and then remove and add 1 tsp vanilla…drizzle over doughnut muffins! and fill your tummy and hands with chocolate and sprinkles…makes my heart do cartwheels! ~and according to them…they are family approved!
